Bitched-Up Pizzas
Spinach Pizza
1 pre-made full-sized pizza crust (optional: brush with Olive oil)
¾ c. tomato-basil pizza sauce
¼ tsp. crushed red pepper
1 bag fresh spinach
8-10 chopped sun-dried tomato halves
8 chopped pitted kalamata olives
1 c. shredded mozzarella cheese
Top pizza crust with sauce and sprinkle with red pepper. Pile on fresh spinach, then sprinkle sun-dried tomatoes, olives and cheese evenly. Bake according to pizza crust instructions (about 450 degrees for 10-12 minutes).
Barbeque Chicken Pizza
1 pre-made full-sized pizza crust (optional: brush with Olive oil)
2 c. chopped cooked chicken
2/3 c. spicy barbecue sauce, divided
1/3 c. slivered red onion
½ c. cooked yellow corn
4 T. chopped fresh cilantro
1 c. shredded mozzarella cheese
Combine chicken with 1/3 barbecue sauce with corn and onion in a small bowl. Spread remaining barbeque sauce on pizza crust, then top evenly with chicken mixture. Sprinkle cilantro and cheese evenly. Bake according to pizza crust instructions (about 450 degrees for 10-12 minutes).
Mr. D’s Famous Pizza
1 pre-made full-sized pizza crust (optional: brush with Olive oil)
¾ c. pizza sauce
1 can quartered artichokes in brine (drained)
1 small can of sliced mushrooms
1/3 c. sliced banana peppers
1/3 c. Pepperoni or crumbled hot sausage
1 c. shredded mozzarella cheese
Spread sauce on crust, then top with artichokes, mushrooms, banana peppers, meat and cheese. Bake according to pizza crust instructions (about 450 degrees for 10-12 minutes).
Piper’s Peppered Pizza
1 12” pre-made Gourmet Pizza Crusts (optional: brush with Olive oil)
2 T. sweet roasted red pepper spread
1 tsp. McCormick’s Salad Supreme seasoning
½ 10 oz. jar yellow roasted peppers in olive oil and seasoning
½ large tomato, chopped
2-3 large leaves fresh basil, torn into small pieces
1 c. grated 6-cheese Italian blend
Spread roasted red pepper spread thinly and evenly over crust. Sprinkle 1 teaspoon of seasoning, over red peppers, then spoon ½ jar of yellow peppers onto pizza, allowing a little oil to be added to the crust. Distribute chopped tomato, and pieces of fresh basil over peppers. Top with grated cheese. Bake in 450 degree oven for 7-10 minutes.
Lobster Pizza
(Be sure to drain the tomatoes and lobster before sprinkling them on the crust or it will be soggy.)
1 12” pre-made Gourmet Pizza Crusts (optional: brush with Olive oil)
Garlic powder-butter spread
2 T. grated parmesan cheese
2-3 Roma tomatoes, diced and drained
4 large basil leaves, cut into 1/8” julienne strips
2 oz. lobster meat, drained and cut into 1/2” chunks
½ c. shredded Italian cheese blend
Lemon, optional
Heat the oven to 450 degrees. Lightly brush crust with garlic-butter (edge to edge). Sprinkle on parmesan cheese. Top with tomatoes, basil, lobster meat and cheese. Cook for approximately 4-5 minutes until cheese is melted and bubbly. For extra flavor, squeeze fresh lemon juice over pizza before serving.
